With Girafe, I continue this desire to create vibrant destinations in unexpected places — something Paris offers in abundance. The Cité de l’Architecture has everything: a living museum, an Art Deco landmark, breathtaking architecture and views, and the grandeur of the Trocadéro district — a place that draws Parisians and visitors from around the world…
To echo that magic, only brasseries will do — wildly Parisian, delightfully spectacular. I wanted to give them a modern revival, highlighting style, an uninhibited sense of luxury, constant attentiveness, service that brings back the beautiful gestures of classic dining, and a cuisine driven by the sea — refined but never overdone.
